HIST 425 - Food in World History An inter-disciplinary examination of the role of food in human history beginning with the agricultural revolution and including such topics as the Columbian exchange, industrialization, the rise of the restaurant, food as cultural identity, food policy and the state, fast food, gender roles, health and nutrition, and the emergence of modern attitudes towards food and the body.
