CHEM 514/5214 - Chemical Changes In Food During Processing (3 cr.)
Description This course consists of two lectures and one laboratory session per week. It is designed to provide the students with in-depth information on the principles of food selection and food preparation. This course covers the physical, chemical, and nutritional changes which occur in food during storage, cooking, processing and preservation.
